What you’ll need for the cake:

• 100g spelt flour
• 100g plain flour
• ⅓ cup of agave
• 4 tablespoons cocoa powder
• 1 teaspoon bicarbonate of soda
• 1/2 teaspoon salt
• 5 tablespoons vegetable oil
• 2 teaspoons of vanilla extract
• 1 teaspoon apple cider vinegar
• 250ml water
• 1 flax egg. (2 spoons of ground flax seed mixed with 6 spoons of water, mixed and left to rest for 10 minutes)

The simple steps:

1. Mix all the wet ingredients together
2. Mix all the dry ingredients together
3. Mix the wet and dry ingredients together
4. Bake at 180 degrees for 40-50 minutes
5. Leave to cool & make the topping

What you’ll need:

• 1 large Ripe avocado
• 1 heaped spoon of cacao powder
• 4 spoons of coconut oil
• 2 spoons of coconut milk

Method:

Blend all these delicious ingredients together until smooth and creamy and add it to the top of the cake once it has cooled. Top with a dusting of cacao powder & cacao nibs for an added boost!
